Afghan Biscuit Slice
The NZ Classic Afghan Biscuits are given an easy makeover into this Afghan Biscuit Slice. With cornflakes, a chocolate icing and the walnut!

Ingredients
- 1 ½Cups Icing Sugar. 202 grams
- 1heaped Tablespoon Cocoa Powder, 6 grams
- 1teaspoon Vanilla Essence, 5 mls
- 1teaspoon Butter, melted, 5 mls
- 1-2 TBSP Water, 15-30 mls
- Walnut Halves
- 200grams Butter - softened
- ½Cup White Sugar, 100 grams
- 1 ¼Cups Plain White Flour, 162 grams
- ¼Cup Cocoa Powder, 22 grams
- 1teaspoon Vanilla Essence, 5 mls
- 2Cups Cornflakes - 60g (or you can use two weetbix)
Instructions
Step 1
Preheat oven to 180C Bake (350F)Step 2
Prepare an 23 or 25 cm square slice tin by greasing - or as I do - lightly spraying with cooking spray and covering in baking paperStep 3
Using a food mixer or electric beater cream butter & sugar for 4-5 minutes until creamyStep 4
Add flour, cocoa & vanilla and mix wellStep 5
Add cornflakes and lightly combine.Step 6
Spoon into the prepared tin and spread evenlyStep 7
Bake for 25 minutes, will be soft when removed from the ovenStep 8
Allow to cool for at least 15 minutes before preparing the icing.Step 9

To prepare your icing - in a medium bowl combine icing sugar, cocoa, vanilla & melted butter and mixStep 11
Slowly add the water a little at a time until the desired consistency is reached. If you accidentally add too much water just add a little icing sugar.Step 12
Spread the icing over the cooled slice, sprinkle with walnut halves and allow to fully cool and setStep 13
Slice & store in an airtight container for 3-4 days.
