Rhubarb Sheet Cake

I first tried this sheet cake at my neighbor’s Susanna back in 2014, just before we left sailing. She made it with plums and some cinnamon whipped cream. It was so amazing that I asked for the recipe (I wasn’t much into baking back then 😅). And since then, I kept making it with any single fruit I had and sharing it with everyone who tasted it and loved it! Thank you Susanna!

Today I wanted to try it for the first time with rhubarbs in a geometric way. I was never really a fan, but only because I didn’t know this fruit. So I thought I make it nice and if it’s not yummy then at least it looks beautiful. Well, it was really yummy!!!

Btw, I tend to use less sugar than the original recipe, which means 3 dl ( 300g or 1 cup) instead of 4 dl (360g or 1 1/2 cup).
And 1 tsp of vanilla extract instead of vanilla sugar.

For the rhubarb pattern, I just had much fun cutting and placing the colorful pieces according to I had in mind and drew the same morning after browsing through Pinterest (see photos) â˜ș

✹Susanna’s swedish Recipe:

125g butter
4 eggs
4 dl (360g or 1 1/2 cups) of sugar
6 dl (360g or 2 1/2 cups) of flour
4 tsp (15g / 1 pkg) of baking powder
1 pkg of vanilla sugar
1 dl of milk

Remove the butter from the refrigerator and allow to warm to room temperature.

Beat the eggs with the sugar until they become frothy.

Add the flour, baking powder, vanilla sugar and mix.

Add the butter and milk.

Spread the dough on the baking sheet or in the trays, put the fruit * on it, push till half, bake at 175 degrees for about 40 minutes if it is a whole cake and less than 30 if it is muffins.

* Fruits: I used this recipe with all possible and imaginable fruits (fresh or frozen) and it was always a success! Apples, pears, plums, bananas, pineapples, raspberries, apricots, in short, the list goes on ...

👉 Asma: J’ai tendance à utiliser moins de sucre que la recette originale, ce qui signifie 3 dl (300g ou 1 tasse) au lieu de 4 dl (360g ou 1 1/2 tasse).
Et 1 cuillÚre à café d'extrait de vanille au lieu de sucre vanillé.
Souvent je rajoute des amandes ou noisettes moulues selon le fruit utilisé.

Pour les rhubarbes, j’ai juste coupĂ© et placĂ© selon le dessin que j’avais en tĂȘte et que je me suis amusĂ©e Ă  prĂ©parer le matin mĂȘme en m’inspirant de Pinterest. 😉

✹Recette SuĂ©doise de Susanna:

125g de beurre,
4 oeufs,
4 dl de sucre,
6 dl de farine,
1 paquet de levure,
1 paquet de sucre vanillé,
1dl de lait

Retirer le beurre du réfrigérateur et laisser se réchauffer à température ambiante.

Battre les Ɠufs avec le sucre jusqu'à ce qu'ils deviennent mousseux.

Ajouter la farine, la levure chimique, le sucre vanillé et mixer.

Ajouter le beurre et le lait.

Étaler la pĂąte sur la plaque de cuisson ou dans les barquettes, mettre les fruits* dessus, cuire au four Ă  175 degrĂ©s pendant environ 40 minutes si c’est un gĂąteau entier et moins que 30 si ce sont des muffins.

*Fruits: j’ai utilisĂ© cette recette avec tous les fruits possibles et imaginables (frais ou surgelĂ©s) et c’était toujours un succĂšs! Pommes, poires, prunes, bananes, ananas, framboises, abricots, bref, la liste est longue...

👉Asma: Übrigens ich neige dazu, weniger Zucker als das Originalrezept zu verwenden, was 3 dl (300 g oder 1 Tasse) anstelle von 4 dl (360 g oder 1 1/2 Tasse) bedeutet.
Und 1 TL Vanilleextrakt anstelle von Vanillezucker.
Ab und zu, branche ich auch gemahlene Mandeln dazu.

FĂŒr das Rhabarbermuster hatte ich viel Spaß beim Schneiden und Platzieren der bunten StĂŒcke, wie ich es mir vorgestellt hatte, und zeichnete am selben Morgen nach dem Durchsuchen von Pinterest (siehe Fotos) â˜ș

✹Schwedische Rezept von Susanna:

125g Butter,
4 Eier,
4dl Zucker,
6dl Mehl,
4TL Backpulver
1Pckg Vanillezucker,
1dl Milch

Butter aus KĂŒhlschrank holen und auf Zimmertemperatur aufwĂ€rmen lassen.

Eier mit Zucker schaumig rĂŒhren.

Mehl, Backpulver, Vanillezucker dazugeben und rĂŒhren.

Butter und Milch dazugeben.

Teig auf Backblech verteilen, FrĂŒchte* drauf, im Backofen bei 175 Grad ca. 40 min backen fĂŒr den ganzen Blech und weniger als 30 min falls kleiner (z.B. Muffins 20 min).

* FrĂŒchte: Ich habe dieses Rezept mit allen möglichen und vorstellbaren FrĂŒchten (frisch oder gefroren) verwendet und es war immer ein Erfolg! Äpfel, Birnen, Pflaumen, Bananen, Ananas, Himbeeren, Aprikosen, kurz gesagt, die Liste geht weiter ...
