Step 1Place the slices of persimmon on two baking trays lined with baking paper.
Step 2Dry for approx. 10 hrs. in an oven preheated to 60°C (convection), keeping the oven door slightly ajar with the handle of a wooden spoon. Remove from the oven, transfer to a cooling rack with the baking paper and leave to cool.
