    Brush the tuna cheek with oil, season with salt. Empty the sesame seeds into a deep bowl, mix, toss the fish in the seeds. Heat the oil in a non-stick frying pan, fry the fish for approx. 30 secs. on each side, leave to cool.

    Combine the rice vinegar, soy sauce, sesame oil and honey.

    Combine the mayonnaise and wasabi.

    Cut the tuna cheek into thin slices, arrange on a platter, drizzle with the dressing. Garnish with edamame and micro greens, serve with the mayonnaise.
