Ingredients
- 250 gvegan, dark chocolate
- 500 gsilken tofu
- 1 ½ dlsoya drink
- 50 gicing sugar
- 1 parcelvanilla sugar
- 1organic orange
- 1organic orange
- 1 tbspsugar
- 1 tbsporange jam
- 50 gvegan, dark chocolate
Instructions
Step 1
Place the chocolate in a thin-sided bowl and suspend over a gently simmering bain-marie, ensuring that the bowl does not touch the water. Melt the chocolate and stir until smooth, allow to cool slightly. Puree the silken tofu with the soya drink, icing sugar, vanilla sugar and orange zest, add the chocolate, briefly puree. Pour the mixture into the ramekins, cover and chill for approx. 2 hrs.Step 2
Thinly peel the orange zest using a peeler, cut into thin strips, place in a pan. Squeeze out the orange, add to the pan along with the reserved juice (yields approx. 150 ml). Mix in the sugar, bring to the boil, reduce the heat, simmer for approx. 10 mins. Mix in the jam, leave to cool.Step 3
Top the mousse with the orange sauce and chocolate shavings.
