Ingredients
- 200 gpeas
 - water
 - ½ dlrice drink
 - ½lemon
 - 3 sprigspeppermint
 - a littlesalt and pepper to taste
 - 2peaches
 - 1tomato
 - 1onion
 - 5 sprigsbasil
 - ½lime
 - 1 tspmaple syrup
 - salt and pepper to taste
 - 1 tbspolive oil
 - 2bell pepper
 - 200 gcourgettes
 - salt and pepper to taste
 - 6corn tortillas
 - 100 gcherry tomatoes
 - 50 gpickled onions (borettane)
 
Instructions
Step 1
Blanch the peas in boiling water for approx. 2 mins., drain, rinse with cold water. Put the peas in a blender, add the rice milk and all the other ingredients up to and including the pepper, purée.Step 2
In a bowl, mix the peach with all the other ingredients up to and including the pepper, cover and chill.Step 3
Heat the oil in a non-stick frying pan. Fry the pepper and courgette for approx. 10 mins., stirring occasionally, then season.Step 4
Heat up the tortillas according to the packet instructions, place on a plate. Spread 1 tsp of pea dip on each one. Scatter over the vegetables, cherry tomatoes, and onions. Drizzle over the peach sauce.
