Ingredients
- 450 gred rhubarb
- 1 tbspwater
- 1 tbspmaple syrup
- 200 gfine whole-grain rolled oats
- 2 tbsplinseed
- 4 ½ dloat drink
- 1 tbspmaple syrup
- ¼ tspbourbon vanilla powder
- 2 pinchessalt
- 2 tbsphazelnuts

Rhubarb compoteStep 2
Mix the rhubarb, water and maple syrup in a pan, bring to the boil. Cover and simmer for approx. 5 mins.Step 3
OatsStep 4
Mix the oats with all the other ingredients up to and including the salt. Pour half of the compote into the jars, top with the oat mixture, cover and leave to absorb in the fridge for 8 hrs. or overnight.Step 5
To serveStep 6
Serve the overnight oats with the remainder of the compote and the nuts.
