Ingredients
- 300 gwhite flour
- ¾ tspsalt
- 1 tbspsugar
- 2 tspbaking powder
- 2 tbspdill
- 100 gbutter
- 1 ½ dlmilk
- milk
- 150 gclotted cream
- 2 tsphorseradish
- 1 ½ tbsplemon juice
- ¼ tspsalt
- 100 gsmoked salmon in slices (organic)
- ½organic lemon
- 15 ggarden cress

DoughStep 2
In a bowl, mix the flour with all the other ingredients up to and including the dill. Add the butter and rub together using your hands to form an even, crumbly mixture. Pour in the milk and mix quickly to form a soft dough – do not knead. Flatten the dough, cover and chill for approx. 30 mins.Step 3
To shape the sconesStep 4
Roll out the dough to approx. 1½ cm thick, cut out circles (approx. 6 cm in diameter), place on a baking tray lined with baking paper, brush with a little milk.Step 5
To bakeStep 6
Approx. 20 mins. in the centre of an oven preheated to 200°C, allow to cool slightly on a rack. Cut the scones in half.Step 7
Clotted creamStep 8
Combine the clotted cream, horseradish, lemon juice and salt.Step 9
To serveStep 10
Spread the clotted cream on top of the scones. Add the salmon, lemon slices and cress.
