    Break the dark chocolate and white chocolate into pieces, place in two separate thin-sided bowls. One after the other, suspend the bowls over a gently simmering bain-marie; the bowl must not touch the water. Melt the chocolate, remove from the pan, stir the chocolate until smooth, pour into a tin lined with baking paper.

    Finely chop the apricots. Scatter the apricots, pistachios, Smarties and fleur de sel on top of the chocolate, leave to cool, chill for approx. 1 hr.
