Ingredients
- 4corn cobs
 - salted water
 - 1organic lime
 - 3 tbspolive oil
 - 1 tspliquid honey
 - ¼ tspsalt
 - a littlepepper
 - 1 bunchbasil
 - 4ripe avocados
 - 1organic lime
 - ½ tbspolive oil
 - 1 tspcumin
 - salt and pepper to taste
 - 150 gtortilla chips
 
Instructions
Step 1
Cook the corn cobs in boiling salted water for approx. 15 mins. Remove the corn kernels from the cobs using a sharp knife.Step 2
In a bowl, mix the lime zest and juice with all the other ingredients up to and including the pepper. Add the corn and basil, mix.Step 3
Mash the avocado with a fork, mix in the lime juice and oil, season.Step 4
Plate up the guacamole and corn salad, serve with tortilla chips.
