- 300 glight spelt flour
- 100 gfull-cane sugar
- 200 gbutter
- 60 gapple sauce
- 300 gcherry jam
- 2 tbspflaked almonds
- icing sugar

Mix the flour and sugar in a bowl. Add the butter and rub together using your hands to form an even, crumbly mixture. Add the apple sauce, mix quickly to form a soft dough; do not knead. Flatten the dough, cover and chill for approx. 1 hr.Step 3

Roll the dough into a rectangle approx. 4 mm thick between two sheets of baking paper. Remove the top sheet of baking paper. Spread the jam on top of the dough, leaving approx. 1 cm free around the edges. Fold in the edges, sprinkle with flaked almonds. Transfer to a baking tray along with the baking paper.Step 5

Approx. 25 mins. in the centre of an oven preheated to 200°C. Remove from the oven, leave to cool on a rack, dust with icing sugar, cut into slices.
