Ingredients
- 125 gplain organic cream cheese
- 1 bunchflat-leaf parsley
- 2 tbspwhite wine vinegar
- 1 tbspwater
- ¼ tspsalt
- 500 gbaby potatoes
- salted water
- ¼ tspsalt
- a littlepepper
- 2eggs

Puree the cream cheese, parsley, vinegar, water and salt.Step 3
PotatoesStep 4
Cook the potatoes in boiling salted water for approx. 15 mins. until soft. Drain the potatoes, add to the dressing, mix and leave to cool, season.Step 5
SaladStep 6
Simmer the eggs in boiling water for approx. 7 mins., rinse in cold water, then peel. Slice the eggs in half, plate up with the potatoes.
