Ingredients
- 2 dlrice drinks
- 50 gunsalted, shelled pistachios
- 1 ½ dlsunflower oil
- 100 gsugar
- 100 gapple sauce
- 2 tbspapple vinegar
- 250 gwhite flour
- 50 gshelled ground almonds
- 2 tspbaking powder
- 1 tspsodium bicarbonate
- ¼ tspsalt
- 30 gunsalted, shelled pistachios
- 1 tbspsugar
- 1 tbspsunflower oil
- 150 gvegan almond yogurt
- 40 gunsalted, shelled pistachios

Cake mixtureStep 2
Puree the rice milk and pistachios in a blender. Place the oil, sugar, apple sauce and vinegar in a bowl, beat using the whisk on a mixer, stir in the pistachio mixture. Mix the flour with all the other ingredients up to and including the salt, mix in. Transfer to cake mixture to the prepared tin.Step 3
CrumbleStep 4
Mix the pistachios, sugar and oil. Spread on top of the cake mixture.Step 5
To bakeStep 6
Approx. 50 mins. in the lower half of an oven preheated to 180°C. Remove from the oven, allow to cool slightly, remove from the tin and leave to cool completely on a rack.Step 7
Yoghurt and pistachio creamStep 8
Puree the almond yoghurt and pistachios, serve with the cake.
