Ingredients
- 250 gquinoa
- 100 gfrozen peas
- 4 ½ dlwater
- ½ tspsalt
- ½ tbspcoarse-grain mustard
- 2 tbspapple vinegar
- 1 tbsplemon juice
- 5 tbspolive oil
- 1 tbspliquid honey
- ¼ tspsalt
- a littlepepper
- 1cucumber
- 1red-skinned apple
- ½ bunchdill
- ½ bunchpeppermint
- 1 tbspolive oil
- 8scallops
- ½ tspsalt
- a littlepepper
Instructions
Step 1
QuinoaStep 2
Cover and cook the quinoa in boiling water over a low heat for approx. 15 mins. until soft. Add the peas for the final 2 mins. and cook with the lid on, season with salt, leave to cool.Step 3
DressingStep 4
In a bowl, mix the mustard with all the other ingredients up to and including the pepper. Add the quinoa and peas together with the cucumber, apple, dill and mint, mix.Step 5
ScallopsStep 6
Heat the oil in a non-stick frying pan. Season the scallops, fry for approx. 1 min. on each side. Plate up the salad and top with the scallops.
