Ingredients
- 3 tbspolive oil
- 1 tbspcoarse-grain mustard
- 3garlic cloves
- 4 sprigsthyme
- 1 tspsalt
- a littlepepper
- 1 kggreen asparagus
- 2red onions
- 100 gday-old bread
- 50 grocket
- 1 bunchherbs
- 3 tbsplemon juice
- 3 tbspolive oil
- ¼ tspsalt
- a littlepepper
Instructions
Step 1
Asparagus and breadStep 2
Whisk the oil, mustard, garlic and thyme in a bowl, season. Add the asparagus, onions and bread, mix well, spread on a baking tray lined with baking paper.Step 3
To roastStep 4
Approx. 35 mins. in the centre of an oven preheated to 220°C. Remove, allow to cool slightly.Step 5
PanzanellaStep 6
Mix the rocket and herbs in with the asparagus and bread. Whisk together the lemon juice and oil, season. Plate up the panzanella, drizzle the dressing over the top.
