Ingredients
- ½ dlolive oil
- 1 tspmild paprika
- ½ tspground cumin
- ½organic lime
- 1garlic clove
- 400 gminced meat (beef and pork)
- 4 tbsppanko breadcrumbs
- ¼ tspsalt
- 3bell pepper
- 1red onion
- ½ tspsalt
- 1 tincorn kernels
- a littlepepper
- 350 gcorn tortillas
Instructions
Step 1
Combine the oil, paprika and cumin, grate in the lime zest, squeeze out the juice, add to the marinade.Step 2
Mince the garlic in a bowl, add the meat and breadcrumbs, season with salt, add 2 tbsp of the marinade. Mix together, knead well until you have a compact mixture. Divide the mixture into 16 portions, shape into oval sausages.Step 3
Halve the pepper, remove the seeds and cut into thin strips. Cut the onion into thin wedges. Drain the corn, transfer to a tray lined with baking paper along with the pepper, onion, sausages and the remainder of the marinade, mix, season.Step 4
Approx. 30 mins. in the centre of an oven preheated to 220°C, remove from the oven, add the tortillas, cook for a further 5 mins.
