Chocolate Rum Balls
Here's one from our archives - a good old traditional rum ball recipe made with crushed biscuits.
- 2cups malt or wine biscuits, crushed finely
- 125g butter
- ½cup Chelsea Soft Brown Sugar, firmly packed
- 1cup sultanas or chopped raisins
- 1cup desiccated coconut
- ½cup lemon juice
- 1Tbsp cocoa
- 2Tbsp rum
- Extra coconut for rolling
Step 1Melt butter, add brown sugar and stir over heat for 2-3 mins until the sugar has dissolved. Mix in the dry ingredients. Add the lemon juice and rum then mix together thoroughly. Using wet hands shape into small balls. Roll in the extra coconut. Chill before serving.
