Ingredients
- 2 tbspolive oil
 - 50 gpanko breadcrumbs
 - 1garlic clove
 - 2 pinchessalt
 - 2 tbspolive oil
 - 3courgettes
 - ½ tspsalt
 - a littlepepper
 - ½ bunchbasil
 - 80 gcured ham in slices
 
Instructions
Step 1
Heat the oil in a large non-stick frying pan. Stir fry the breadcrumbs and garlic for approx. 4 mins., season with salt, remove, set aside.Step 2
Heat the oil in the same pan. Fry the courgette slices for approx. 10 mins., stirring occasionally, season. Serve the courgette with the basil, cured ham and crunchy crumb topping.
