- 100 gsmoked salmon
- 1 ½ tbspwhite wine vinegar
- 2 tbspoil
- 2 tspgrated horseradish in a jar
- ½ tspsugar
- ¼ tspsalt
- a littlepepper
- 2 tbsptarragon

Plate up the apple and salmon.Step 2
Whisk the vinegar, oil and horsradish, season. Stir in the tarragon. Drizzle the dressing over the carpaccio, top with the horseradish.
