Ingredients
- 3 tbspfish sauce
- 4 tbsptoasted sesame oil
- 2 tbspwater
- 1organic lime
- ½ tspcane sugar
- 2shallots
- 2garlic cloves
- 2 stickslemongrass
- 1red chilli
- 600 gbeef rump
- 8wooden skewers
- ¾ tspsalt
- ½cucumber
- 2carrots
- ½ bunchpeppermint
- 2baby lettuce
- 20 gsalted cashew nuts

Step 1
DressingStep 2
In a bowl, mix the fish sauce with all the other ingredients up to and including the sugar, set aside half of the mixture. Using a food processor or mortar and pestle, puree the shallots, garlic, lemongrass and chilli until smooth, add to the dressing, set aside.Step 3
Beef skewersStep 4
Add the meat to the dressing, mix, thread onto the skewers in a wavy design, season with salt.Step 5
Charcoal/gas/electric grillStep 6
With the lid down, grill the skewers over/on a high heat (approx. 250°C) for approx. 3 mins. on each side.Step 7
To serveStep 8
Place the cucumber and carrot strips, mint leaves and beef skewers in the lettuce leaves, drizzle with the reserved dressing, scatter the nuts on top.
