- 1 tbspolive oil
- 100 gbacon strips
- 250 gmini asparagus
- 150 gfrozen peas
- 2 pinchessalt
- a littlepepper
- 500 gpasta
- salted water
- 1 tbspolive oil
- 3spring onions incl. green parts
- 1 bunchbasil
- ΒΌ tspsalt
- a littlepepper
- 80 ggrated Parmesan
Instructions
Step 1
Asparagus and baconStep 2
Heat the oil in a frying pan. Gently fry the strips of bacon until crispy, add the asparagus. Reduce the heat, cook for approx. 5 mins., add the peas, cook for approx. 2 mins., season. Remove and set aside. Put the pan to one side.Step 3
PastaStep 4
Cook the pasta according to the packet instructions until al dente, drain and reserve approx. 200 ml of the cooking water.Step 5
Spring onion sauceStep 6
Heat the oil in the same frying pan. Add the spring onions, stir fry for approx. 5 mins. Add the basil, season. Add the reserved water and parmesan, puree until smooth. Add the pasta and bacon, gently heat through.
