Ingredients
- 150 gcouscous
 - 1organic lime
 - 1 tspground coriander seeds
 - ½ tspsalt
 - 3 ½ dlwater
 - 2 bunchescoriander
 - 1garlic clove
 - ½ dlolive oil
 - 2 tbspwater
 - ½ tbspliquid honey
 - ¼ tspsalt
 - a littlepepper
 - 2peaches
 - ½charentais melon
 - 2 tbspolive oil
 - ¼ tspchilli flakes
 - ¼ tspsalt
 - 3tomatoes
 - 200 gburrata piccola
 
Instructions
Step 1
Mix the couscous, lime zest, coriander and salt in a bowl, pour the boiling water over the top, cover and leave to absorb for approx. 5 mins. Separate the couscous with a fork.Step 2
Puree the coriander, garlic, oil, water and honey with the reserved lime juice until smooth, season.Step 3
Brush the peach and melon with oil, season. With the lid down, grill the peach and melon over/on a medium heat (approx. 200°C) for approx. 3 mins. on each side.Step 4
Serve the couscous on a platter. Top with the peach, melon and tomatoes. Arrange the burrata on top. Drizzle with the coriander dressing.
