Ingredients
- 100 gbutter
- 200 ghalf-white flour
- 80 gcoarse cane sugar
- 40 gchocolate powder
- 2 tspbaking powder
- 2fresh egg yolks
- 2 dlmilk
- 2fresh egg whites
- 1 pinchsalt
- clarified butter
- 200 ggooseberries
- 4 tbsprice syrup
- 250 ghalf-fat quark
Instructions
Step 1
Melt the butter in a pan, allow to cool slightly. Mix the flour, sugar, chocolate powder and baking powder in a bowl. Add the egg yolks and milk with the butter, beat using the whisk on a mixer to make a smooth batter. Cover the batter and leave to stand at room temperature for approx. 15 mins. Beat the egg whites with the salt until stiff, carefully fold into the batter using a rubber spatula.Step 2
Heat the waffle iron, brush with a little clarified butter, place 3 tbsp of batter on the waffle iron, smooth down a little. Cook the waffles for approx. 3 mins., remove, leave to cool on a cooling rack. Repeat these steps with the remainder of the batter.Step 3
Cut the gooseberries in half, mix with 1 tbsp of syrup. Place the quark in a bowl along with the remainder of the syrup, mix.Step 4
Plate up the waffles, spread the quark and gooseberries on top.
