Ingredients
- 1organic lime
- 2 tbspolive oil
- ½ tbspliquid honey
- ¾ tspchilli powder
- ½ tspsmoked paprika
- ½ tspsalt
- 450 gargentinian red prawns, frozen
- 4long wooden skewers
- 1avocado
- 1 dlwater
- ½ bunchcoriander
- 1red chilli pepper
- ½ tspsalt
- 1peach
- 300 gcherry tomatoes
- 100 grocket
Instructions
Step 1
In a bowl, mix the lime zest with all the other ingredients up to and including the salt, add the prawns, mix, cover and marinate for approx. 20 mins. Thread the prawns onto the skewers.Step 2
Grill the skewers over/on a high heat (approx. 250°C) for approx. 1 min. on each side.Step 3
Puree the avocado, water, coriander, chilli pepper and salt with the reserved lime juice.Step 4
Plate up the peach, cherry tomatoes and rocket, drizzle with the dressing, serve with the prawn skewers.
