Ingredients
- ½ dlolive oil
- 2 tbspZa'atar (spice mix)
- 500 gwhite flour
- 1 cubeyeast
- 1 pinchsugar
- 1 tspsalt
- 2 ½ dlwater
- 2 tbspolive oil
- 1 tinchickpeas
- 1lemon
- 2 tbspolive oil
- 2 tbsptahini
- 2 ½ tbspwater
- 1 bunchwild garlic
- ½ tspcumin
- ¼ tspsalt
Instructions
Step 1
Za'atar oilStep 2
Combine the oil and za’atar, set aside.Step 3
FlatbreadStep 4
Mix the flour, yeast, sugar and salt in a bowl. Pour in the water and oil, knead for approx. 5 mins. using the dough hook on a food processor. Cover the dough and leave to rise at room temperature for approx. 45 mins.Step 5
To shapeStep 6
Divide the dough into 4 portions, shape into balls. On a lightly floured surface, roll each ball into an oval approx. 2 cm thick. Brush both sides of the flatbread with the za’atar oil, place on a baking tray lined with baking paper.Step 7
To bakeStep 8
Approx. 15 mins. in the centre of an oven preheated to 240°C (convection), remove.Step 9
Wild garlic hummusStep 10
Puree the chickpeas with all the other ingredients up to and including the salt. Transfer the hummus to a bowl, serve with the flatbread.
