Ingredients
- 5 tbspcoarse-grain mustard
- 3 tbspsunflower oil
- 1 tbspwater
- 2 tbspbirnel (pear syrup)
- 800 gsweet potatoes
- ½ tbsponion powder
- ¼ tspsalt
- 50 gsunflower seeds
- 200 gkale
- ¼ tspsalt
- 2apples
- 1pomegranate
Instructions
Step 1
Mix the mustard, oil, water and pear syrup in a large bowl.Step 2
Place the sweet potatoes on a baking tray lined with baking paper, mix with 2 tbsp of the dressing, season.Step 3
Approx. 25 mins. in the centre of an oven preheated to 200°C. Remove, add the seeds, return to the oven for approx 5 mins., remove.Step 4
Add the kale to the dressing, mix and season with salt. Serve the kale in bowls. Top with the sweet potatoes and seeds, and the apple and pomegranate.
