Uncooked Lemon Slice
No baking required, we love the sound of that!
- 200g sweetened condensed milk
- 125g Tararua Butter
- 250g packet plain biscuits
- 1cup desiccated coconut
- Juice and zest from 1 lemon
- Lemon Icing
- 1cup Chelsea Icing Sugar
- 1tsp lemon juice
- Hot water
- Desiccated coconut to sprinkle on top
Step 1Grease and line a 20cm baking tin.
Step 2Melt Tararua Butter and condensed milk together. Crush biscuits and add to butter mixture together with the coconut, lemon juice and lemon zest. Press into tin, then refrigerate for 1 hour.
Step 3Mix together Chelsea Icing Sugar, lemon juice and enough hot water to form a smooth spreadable consistency. Spread over the slice and sprinkle with coconut. Leave to set.
Step 4Alternatively, just dust with Chelsea Icing Sugar.
