Ingredients
- 2 tbsppeanut oil
- 1onion
- 1courgette
- 200 gcauliflower
- 1 ½ tbspcurry powder
- 2 ½ dlcoconut milk
- 3 dlwater
- 125 gred lentils
- 50 gdried apricots
- 1 tspginger
- 1garlic clove
- ½ tspsalt
- 1 tbsppeppermint
Instructions
Step 1
Heat the oil in a pan. Sauté the onion, courgette and cauliflower for approx. 2 mins. Add the curry, cook briefly.Step 2
Pour in the coconut milk and water, bring to the boil. Add the lentils and apricots, reduce the heat, cover and simmer for approx. 20 mins., stirring occasionally. Add the ginger and garlic, season with salt. Plate up the curry, garnish with mint.
