Preparation Steps

  1. Light yeast dough
  2. Mix the flour, salt, sugar and yeast in a bowl. Add the butter and milk, mix and knead for approx. 5 mins. to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 2 hrs. until doubled in size.
  3. Light rice yeast dough
  4. Mix the flours, salt, sugar and yeast in a bowl. Add the butter and milk, mix and knead for approx. 5 mins. to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 2 hrs. until doubled in size.
  5. Light brown yeast dough
  6. Mix the flour, salt, sugar, cocoa powder and yeast in a bowl. Add the butter and milk, mix and knead for approx. 5 mins. to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 2 hrs. until doubled in size.
  7. Medium-brown yeast dough
  8. Mix the flour, salt, sugar, cocoa powder and yeast in a bowl. Add the butter and milk, mix and knead for approx. 5 mins. to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 2 hrs. until doubled in size.
  9. Brown dough
  10. Mix the flour, salt, sugar, cocoa powder and yeast in a bowl. Add the butter and milk, mix and knead for approx. 5 mins. to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 2 hrs. until doubled in size.
  11. Dark brown dough
  12. Mix the flour, salt, sugar, cocoa powder and yeast in a bowl. Add the butter and milk, mix and knead for approx. 5 mins. to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 2 hrs. until doubled in size.
  13. To shape
  14. Shape each piece of dough into a roll and make into a little man. Use sultanas for the eyes. Transfer the little bread men to two baking trays lined with baking paper, leave to rise for a further 15 mins. Brush with a little milk.
  15. To bake
  16. Approx. 25 mins. in an oven preheated to 180 °C (convection). Remove from the oven and leave to cool on a rack.
