Ingredients
- 5 dlwater
- 2 dlwhite balsamic vinegar
- 2 tbsphoney
- 1cucumber
- 100 gcashew nuts
- 1 dlwater
- 4 tbsptoasted sesame oil
- 8 tbspsoy sauce
- 2 tbspmirin (rice wine)
- 2 cmginger
- ΒΌ tspcayenne pepper
- 1head lettuce
- 1 bunchdill
- 1 bunchpeppermint
- 2 tbsptoasted sesame seeds
Instructions
Step 1
Bring the water to the boil with the balsamic and honey. Fill a jar with the cucumber, pour the hot liquid over the top. Leave to cool, refrigerate for approx. 8 hrs. or overnight.Step 2
Soak the nuts in water for approx. 8 hrs. or overnight, drain. Puree the nuts with the water, oil, soy sauce, mirin, ginger and cayenne pepper until smooth.Step 3
Fill the lettuce leaves with the pickles and herbs. Drizzle with the dressing, sprinkle with sesame seeds. Roll up the lettuce leaves.
