Ingredients
- 400 gsweet potatoes
- 1red onion
- 2garlic cloves
- oil
- 300 gminced meat (beef)
- ½ tspsalt
- 700 gpuréed tomatoes
- 3 dlbeef bouillon
- 1 tspmild paprika
- ¼ tspchilli flakes
- 1 tinred kidney beans
- 1 tincorn kernels
- salt and pepper to taste
- 200 gsour single cream
- ½ bunchcoriander
Instructions
Step 1
Peel the sweet potatoes, cut into cubes. Peel and finely chop the onion, mince the garlic.Step 2
Heat the oil in a frying pan. Brown the meat in batches for approx. 3 mins. per batch, remove from the pan, season with salt. Reduce the heat. Sauté the onion, garlic and sweet potatoes for approx. 5 mins. Return the meat to the pan, pour in the passata and stock, season, bring to the boil. Cover and simmer over a medium heat for approx. 30 mins.Step 3
Rinse and drain the beans and sweetcorn, add to the pan, simmer (uncovered) for approx. 15 mins., season.Step 4
Serve the chilli con carne with sour single cream. Tear the coriander, sprinkle on top.
