  1. Step 1

    Peel the sweet potatoes, cut into cubes. Peel and finely chop the onion, mince the garlic.
  2. Step 2

    Heat the oil in a frying pan. Brown the meat in batches for approx. 3 mins. per batch, remove from the pan, season with salt. Reduce the heat. Sauté the onion, garlic and sweet potatoes for approx. 5 mins. Return the meat to the pan, pour in the passata and stock, season, bring to the boil. Cover and simmer over a medium heat for approx. 30 mins.
  3. Step 3

    Rinse and drain the beans and sweetcorn, add to the pan, simmer (uncovered) for approx. 15 mins., season.
  4. Step 4

    Serve the chilli con carne with sour single cream. Tear the coriander, sprinkle on top.
