Ingredients
- ¾ dlapple vinegar
- ½ dlwater
- 1 tspsugar
- ½ tspsalt
- 1bay leaf
- 2 tbspyellow mustard seeds
- 2oranges
- 2Half-blood oranges
- 1 tbspolive oil
- ¼ tspsea salt
- a littlecayenne pepper
- 1 tbspmustard
- ½ tbspliquid honey
- 3 tbspolive oil
- ½ tspsalt
- a littlepepper
- 200 gcurly endive
- 4burrata piccola
Instructions
Step 1
Bring the vinegar, water, sugar, salt and bay leaf to the boil. Reduce the heat, add the mustard seeds, simmer for approx. 10 mins., stirring occasionally. Strain the mustard seeds, leave the liquid and mustard seeds to cool.Step 2
Place the oranges on a baking tray lined with baking paper, drizzle with oil, season.Step 3
Approx. 25 mins. in the upper half of an oven preheated to 220°C. Remove, allow to cool slightly.Step 4
Combine the mustard, honey, reserved liquid and oil, season. Add the salad, mix. Serve the salad with the oranges, burrata and mustard seeds.
