Ingredients
- 1aubergine
 - 1courgette
 - 2yellow peppers
 - 500 gcherry tomatoes
 - 1red onion
 - 2garlic cloves
 - 2 tbspolive oil
 - ¼ bunchthyme
 - 1 tspsalt
 - a littlepepper
 - 3 tbspbalsamic vinegar
 - 2 tbsplemon juice
 - 4 tbspolive oil
 - ½ bunchbasil
 - ¼ tspsalt
 - a littlepepper
 - 200 gpasta
 - salted water
 
Instructions
Step 1
Mix the vegetables with the oil and thyme, season, transfer to a baking tray lined with baking paper.Step 2
Approx. 45 mins. in the centre of an oven preheated to 220°C. Remove the vegetables, allow to cool slightly, remove the garlic.Step 3
Combine the balsamic, lemon juice, oil and basil in a bowl, season.Step 4
Cook the pasta in boiling salted water until al dente, drain and rinse in cold water. Add the pasta and vegetables to the dressing, mix.
