  1. Step 1

    Bring the sugar and water to the boil without stirring. Reduce the heat and simmer, swirling the pan occasionally until a light brown caramel has formed. Add the figs, simmer for approx. 3 mins. Pour in the lemon juice, remove the pan from the heat, leave to cool.
  2. Step 2

    Mix the ricotta, cream and honey in a stainless steel bowl, mix in the figs. Cover and freeze the mixture for approx. 4 hrs., stirring with a whisk at least 4 times.
  3. Step 3

    Drizzle the ice cream with honey, serve with the Biber.
