Ingredients
- 1 tinchickpeas
- 70 gboiled, diced beetroot
- 50 gcashew nuts
- 30 gchopped pistachios
- 1organic lemon
- 1garlic clove
- 2 tspground cumin
- 1 tspsalt
- 1 tbspolive oil
- 150 gplain greek yoghurt
- 2 tbspcashew cream
- ½ bunchpeppermint
- ¼salt
- a littlepepper
Instructions
Step 1
Puree the chickpeas with all the other ingredients up to and including the salt. With wet hands, shape into approx. 20 balls, spread out on a baking tray lined with baking paper. Brush the balls with oil.Step 2
Roast for approx. 20 mins. in the centre of an oven preheated to 180°C.Step 3
Mix together the yoghurt, cashew butter, reserved lemon juice and mint, then season. Serve the dressing with the falafel.
