Ingredients
- 350 gwhite flour
- 120 gsugar
- ½ tspsalt
- ¼ tspbourbon vanilla powder
- 175 gbutter
- 1fresh egg
- 1fresh egg yolk
- 150 graspberry jam
- icing sugar
Instructions
Step 1
Mix the flour, sugar, salt and vanilla in a bowl. Add the butter and rub together using your hands to form an even, crumbly mixture. Add the egg and egg yolk, mix quickly to form a dough.Step 2
Roll out the dough in batches between two sheets of baking paper to approx. 3 mm thick. Cut out biscuits approx. 5 cm in diameter. Cut a small circle out of half of the biscuits, place on two baking trays lined with baking paper, chill for approx. 30 mins.Step 3
Approx. 12 mins. in an oven preheated to 170°C (fan).Step 4
Spread the jam on the biscuit bases using a teaspoon, dust the lids with icing sugar and place on top.
