Ingredients
- 1 ½ tbspbutter
- 1 ½ tbspwhite flour
- 3 dlmilk
- 2 pinchesnutmeg
- ½ tspsalt
- a littlepepper
- 8 sliceswhole-grain toast bread
- 50 gbutter
- 4 slicesham
- 200 gsemi-hard cheese
- ½apple
- a littlepepper
- ½ tbspbutter
- 4eggs
- salt and pepper to taste
Instructions
Step 1
Heat the butter in a pan. Add the flour, cook briefly; the flour must not take on any colour. Pour in the milk all at once, bring to the boil while stirring, reduce the heat and simmer for approx. 5 mins., season and allow to cool slightly.Step 2
Spread a thin layer of butter on one side of each slice of toast bread. Spread half of the béchamel sauce on the buttered side of 4 of these slices. Add the ham, top with half of the cheese and the apple. Place the remaining slices of toast bread on top, press down gently, transfer to a baking tray lined with baking paper. Top with the remainder of the béchamel sauce and cheese, then season.Step 3
Approx. 10 mins. in the centre of an oven preheated to 220°C.Step 4
Heat the butter in a non-stick frying pan. Slide the eggs carefully into the frying pan one at a time, then fry over a low heat until the egg whites are set but the yolks are still runny, season. Place the eggs on top of the cheese & ham toasties, serve hot.
