Ingredients
- 600 gradicchio
 - 1egg
 - ¼ tspsalt
 - ¼ tsppepper
 - 80 gParmesan
 - 1organic orange
 - 1 tbspbutter
 - 1shallot
 - ½ dlred wine
 - ¾ dlbalsamic vinegar
 - 1 tspMaizena cornflour
 - 1 tbspwater
 - 150 gradicchio
 - 50 gdried figs
 
Instructions
Step 1
Dip the radicchio in the egg, place on a baking tray lined with baking paper, season. Sprinkle with the parmesan and orange zest.Step 2
Approx. 25 mins. in the centre of an oven preheated to 200°C.Step 3
Heat the butter in a pan. Briefly sauté the shallot. Pour in the wine and reduce almost completely. Pour in the balsamic and reserved orange juice, simmer over a medium heat for approx. 5 mins. Mix the cornflour with the water, pour into the pan while stirring, reduce for approx. 2 mins. Remove the sauce from the heat, allow to cool slightly, puree.Step 4
Plate up the baked and fresh radicchio, drizzle with the sauce, scatter the figs on top.
