Ingredients
- 1shallot
- 1garlic clove
- 400 gsweet potatoes
- 150 gleaf spinach
- 200 gcouscous
- salt and pepper to taste
- 2 tbspolive oil
- 8 dlvegetable bouillon
- 200 gfeta
- ½ bunchparsley
- 3 tbsplemon juice
- 1shallot
- 1garlic clove
- 400 gsweet potatoes
- 150 gleaf spinach
- 200 gcouscous
- salt and pepper to taste
- 2 tbspolive oil
Instructions
Step 1
Peel and finely chop the shallot and garlic. Peel the sweet potatoes, cut in half lengthwise and then cut into slices approx. 3 mm thick. Spread the sweet potatoes, spinach and couscous on a baking tray lined with baking paper, season. Drizzle with oil, mix.Step 2
Heat the stock in a pan, pour the stock over the vegetables and couscous.Step 3
Approx. 15 mins. in the centre of an oven preheated to 180°C. Remove, crumble the feta and scatter on top, bake for a further 10 mins., remove from the oven.Step 4
Tear off the parsley leaves, scatter on top of the couscous and drizzle with the lemon juice.
